Coachella

Once again, I am back from a mini hiatus, but this spring will be full of many fabulous, fashionable posts.  Both Coachella weekends have come to an end and it was not only an incredible time for music, but also for fashion.  Sadly, I did not make it to Coachella this year (and I am slightly depressed about it) so this post is dedicated to the stylish women of Coachella.  This has been a confusing and chilly spring thus far and I don’t know about you but I am seriously ready to break out the cropped tops, minis, and jean shorts! Festival style is the perfect teaser for summer style!

The Trusty Sweatshirt

I was cleaning out the attic at my parents house and came across an old Hanes sweatshirt I bought from a thrift store in high school.  I have practically been living in the sweatshirt since I rediscovered this treasure.  I have mixed and matched it with skirts, skinnies, my beloved leather joggers and finally workwear.  So one work day morning, when getting out of bed was particularly impossible, it should come as no surprise to you that I turned to my trusty sweatshirt.  I love pushing the boundaries of work wear and redefining pieces that might otherwise be overlooked.  While rocking a sweatshirt to work is not for every office, know that it can be done by dressing it up with complimentary accessories and garments.

Mashed Potato Avocado Baked Eggs

In need of the perfect brunch meal that will impress any diner, but is shockingly easy to make?  I have got you covered.  Full disclosure, I did not actually cook this meal, my wonderful fiancé made it for me the morning after Valentine’s Day.  Mashed potatoes are probably my favorite food ever (avocado is a close second) and luckily we had plenty leftover from our Vday dinner.  This meal was inspired by what was in our fridge, did not take long to cook and was absolutely delicious.  I mean does it get any better than that?

Ingredients:

2 Eggs

1 Avocado

2 Slices of Pancetta

1 Can of Diced Tomatoes

Leftover Mashed Potatoes

1 Onion

Salt & Pepper

Fresh Basil

Parmesan Cheese

How to:

Dice the pancetta and onion.

Sauté the onion and pancetta in a pan on medium heat.

Make thick pancakes out of the mashed potatoes and then place into a separate pan on low/medium heat.  Flip once lightly golden.

Once the onions start to turn translucent add the diced tomatoes to the onion and pancetta pan.

Cut avocado in half and use a spoon to remove the avocado from its skin in one piece

Place avocado in the pan with the tomatoes, onions and pancetta.  Add basil.  Make sure you are keeping an eye on the potatoes and that they aren’t burning.  Once the potatoes are lightly browned/golden remove from heat.

Crack one egg into the hole of each avocado half.  Then cover the pan and let it sit for about 5 minutes or until egg whites actually turn white and are fully cooked through.  The runny-ness of the yolk is up to you.  Next time we make this delicious dish we will put the pan into a 350 degree preheated oven for 5 minutes instead of heating it solely on the stove.  You decide how you would like to handle this step.

Once the egg is cooked plate the potato and avocado egg.  Then smother in the tomato, onion, and pancetta.  Sprinkle with parmesan.

And, of course, enjoy!

Perforated Perfection

I don’t think it is any secret that I love leather!  I think leather is the best addition to any ensemble, and really the more leather the better.  Leather adds depth, edge and excitement to any look.  I like to experiment with different leather articles and accessories, as well as different leather textures and shapes.  The options are endless!  One of my favorite recent purchases is this perforated leather shift dress, which is perfect for work and weekend.  Experiment and embrace leather (vegan or real).

Workin’ it in the Leather Jogger

When I decided to go to Fashion Week this past Fall, I purchased a pair of leather sweatpants (or joggers).  I thought, “I don’t know when I will ever wear these again, but whatever its fashion week.”  Luckily, my first impression could not have been more wrong!  The leather jogger has been surprisingly versatile and the true test of versatility is, “can you wear it to work and on the weekend” and I am here to tell you that you can in fact wear leather track pants to work! The richness of the black leather adds subtlety to a seemingly flamboyant article of clothing and when paired with a something more conservative they are perfectly work appropriate!  Worried your boss might disagree? No worries, send them my way and I will set them straight!  I am absolutely thrilled that these pants don’t live in the past fashion weeks corner of my closet and instead can live on!
